Lentils are the oldest known food to have been recorded in writing.
With their characteristic lens-like shape, which resembles that of a coin, they have inspired countless legends and popular superstitions; in fact, eating lentils is said to bring good luck and wealth.
We cannot be certain that they actually bring prosperity, but one thing is for sure: they are rich in properties. In fact, they are low in fat, help maintain a healthy weight, and contain a lot of protein, fibre and minerals.
Eating lentils is an excellent way to get your fill of iron, they are good for the bones and are very helpful during pregnancy, since they contain a high amount of folic acid.
Given that they are so good for us, it would be best to not only have them on New Year’s Eve, paired with stuffed pig’s trotter as per Italian tradition, but to eat them on a regular basis all year round and throughout the week together with grains.
Lentils can be eaten with pasta and legumes, or even on their own, seasoned with aromatic herbs. They can also be pureed to make a hot creamy soup, or you can use them as an ingredient for meatballs and pies.
So, it’s time to start experimenting!
