The Artichoke

Artichokes have been used since ancient times, and there are many types, grown in both the north and south of Italy. Some of the most popular are the globe artichoke from Albenga or Sardinia, and the Romanesco “mammolo”.
When we think of artichokes, the first thing that comes to mind is how time-consuming and difficult it is to clean them, but their characteristic flavour and the delicious recipes they are used in make all that effort worthwhile: try them sliced raw with oil, salt and lemon, or fried in batter, alla giudia, alla romana, with pasta, in risottos, as fillings… the list goes on!
Artichokes are not only delicious, they are also very good for you: low in calories, they contain little fat and are rich in fibre. They are therefore ideal for anyone looking for a healthy diet without compromising on taste. And they are also rich in mineral salts and vitamins, which are fundamental for our body.
